Orange and White Chocolate Whoopie Pies

Whoopie Pies are a fun way to eat cake, they look like macarons, but are soft and spongy! A cute bite-sized treat that can fit in lunchboxes, and they are so easy to make! Way easier than getting the perfect cake plus frosting. They take only 10 minutes in the oven, prepping and mixing them is easy peasy, and the filling can be made while they are baking.


These Orange whoopie pies with White chocolate ganache filling are fragrant and versatile, as you can substitute the orange flavour with any other flavour you like, such as lemon or vanilla! The filling can be made even easier if you just use Nutella!

Ingredients:

For whoopie pies

- 2 eggs
- 125 g. butter (softened)
- 20 ml orange juice
- 3 tsp orange zest
- 150 g. granulated sugar
- 80 g. full fat plain yogurt
- 230 g. all-purpose flour
- 1 tsp. baking soda
- A pinch of salt
- Orange food coloring (optional)

For filling
- 180 g. white chocolate
- 80 ml whipping cream (or heavy cream)

Procedure:

0. Preheat oven to 180ºC
1. Whisk eggs, butter, orange juice and zest, sugar and yogurt together in a large mixing bowl until well combined.
2. Sift in flour and baking soda gradually, mixing with a spatula. Add in a pinch of salt, mix until you get a nice batter (if it's too dry, add more orange juice, 1 tbsp at a time), and finally add orange food coloring (if you like), until you get the desired color.
3. Transfer batter into a piping bag (or ziplock bag with a snipped corner) and pipe into approximately 3 cm of diameter circles on a baking tray. Flatten out each circle if needed with your finger wet in water.
4. Bake in the oven for about 10 minutes (keep a close eye, they may bake very quickly). You'll know they're done when they are domed and look dry. It's very easy to burn them, so don't overbake. Let them cool before filling them.
6. To make the filling of white chocolate ganache, break the chocolate into small pieces and put them on a medium bowl and set aside.
7. Heat whipping cream on the stove (without getting to boiling temperature) and immediately pour over white chocolate, stir gently until you get a creamy mixture and let cool a bit before transferring into a piping bag.
8. Pipe the filling into the whoopie pies making a little sandwich and let sit in the fridge for at least an hour before serving!
